4 Ingredient Black Bean Patties
1 can Non-GMO Organic Black Beans
2 Medium Sweet Potatoes
1.5 cups Coconut Flour
3 Tbsp Ground Flax Seeds
Olive Oil
Optional: black pepper, garlic, onion, diced peppers, mushrooms (You may have to adjust the flax and coconut flour, based on your additional vegetables)
- Coat sweet potatoes with olive oil and bake for 1 hour at 375 degree
- If adding cooked fresh vegetables, sauté them while the sweet potatoes are baking.
- Drain black beans. Mash with a potato masher
- Peel cooked sweet potatoes and mash with black beans
- Add coconut flour, ground flax seeds, and any desired spices and/or vegetables
- Form into patties and fry in olive oil over medium heat
Serving suggestion: Serve in a lettuce wrap or with a side of fresh vegetables
Suggested Toppings: Fresh homemade salsa or Pico de Gallo, guacamole, cabbage slaw, sauteed mushrooms/onions, Dijon Mustard
