4 Ingredient Black Bean Patties

1 can Non-GMO Organic Black Beans
2 Medium Sweet Potatoes
1.5 cups Coconut Flour
3 Tbsp Ground Flax Seeds
Olive Oil
Optional: black pepper, garlic, onion, diced peppers, mushrooms (You may have to adjust the flax and coconut flour, based on your additional vegetables)

  1. Coat sweet potatoes with olive oil and bake for 1 hour at 375 degree
  2. If adding cooked fresh vegetables, sauté them while the sweet potatoes are baking.
  3. Drain black beans. Mash with a potato masher
  4. Peel cooked sweet potatoes and mash with black beans
  5. Add coconut flour, ground flax seeds, and any desired spices and/or vegetables
  6. Form into patties and fry in olive oil over medium heat

Serving suggestion: Serve in a lettuce wrap or with a side of fresh vegetables
Suggested Toppings: Fresh homemade salsa or Pico de Gallo, guacamole, cabbage slaw, sauteed mushrooms/onions, Dijon Mustard
